I have two accounts on my PS3, my account, DuncanR2N which has a PSN login and all that, and I also have a dummy account, Critters, for my kids to use when they login. My son, after seeing me play alot of SSD decided to give it a go, and logged into the Critters account, however, that account only allowed him to use SSD in demo mode. If I setup a full PSN account for him will that allow him full access to the game? Also, can I limit the online capabilities?

By dummy account I mean that it is unable to log into PSN as it is not tied to an email account or anything that you need to setup a full PSN account.
It's basically just a local user account on the PS3. I'll go ahead and setup and account for him on the PS3 tho so he can play SSD.
