Easiest level for Lethal Lemmings is probably Tricky #4: Hero Lemming to the rescue. All you have to do is increase to 99 and hold circle to fast forward. They're boxed in with a trap at the start, so all 100 of them die quickly without doing anything other than increasing the rate.

Or if you don't want to wait to unlock it, Mayhem #2: Lemmie Down works and is unlocked from the start. You just have to dig through the first platform, then dig again through the second platform right under the first hole. Then all the lemmings will fall down all the way to the bottom in one go and die. And if some get to the bottom platform (and they will), they'll be taken to a teleporter on a high ledge where walking off either side is also a death drop. You get 99 lemmings in that level, and can get a 100th if you activate the cloning machine, which is to the right of the teleporter exit, so if Lemming hits the teleporter walking right, they'll trigger the cloning machine before going splat.

The EASIEST way is to just start up a level, increase rate to 99, then press select and QUIT the game, NOT restart. Quitting the game will make them all pop(die) in 5 seconds and counts. I vouch for this since it's the only trophy I have and Iv'e only killed a lemming twice differently. =)
