Default PSP one stick to PS3 two sticks?

I would like to know whether they have made the changes according to the ps3 controller functions before I make the purchase.

I never used PSP but I know PSP has only one stick

Not sure about CoO, but In Ghost of Sparta, It gives you an option of using the right stick to dodge,and/ or use the PSP's version (Hold L+R to dodge)

also instead of using the shoulder buttons to open chests, you use the O button.
I'd imagine they have the same setup for both games.

It's two sticks on the just like all of the other console versions. You use the right stick to roll instead of the two bumpers for the psp version.

Thats good. bought it today. yes You can use right stick or L1+R1+left stick to dodge
