It depends on your current level the higher you are the longer it takes to increase via this method.

If it took 5 min. without anything happening, then there's something wrong. Don't know what though

i just trained my smithing to 100 alchermy to 100 encharting to 100 and sneak(by the grey beards

) its easy not that fast but when you are doing quest you can stop for a time and train these thing at the end of the game you will be 50

Toto...go to Angi's Camp, it's located in the moutains south of Falkreath. She'll let you practice on targets she has set up, if you complete her challenges (shooting arrows at targets she has on her property) you can get 6 free skill points. There's also a skill book in her end table along with a treasure map..so you'll wind up with 7 extra archery points and it didnt cost ya one septim

What difficulty are you on? If you're on easy, then yes it will take much longer then if you had pumped it up to master.
