Cheers dude, after about two hours trying other techniques I found and copied yours and did it easily first time.

I did it without the shink-ray, i found that drinking a beer at the start and unloading on the boss for a bit, then id drop a holoduke and start spamming pipe bombs to deal with those octabrains, once the boss gets to phase 2 which starts when u take about 25% of his health away the fight is cake after that

I got pissed at the game and put the invinsibility cheat on after
killing all of the octobrains, then turned it off when the octoking
was only 1 or 2 hits away from going down. After the level was
finished I looked and found that I had still gotten credit for
completing the level on insane. I do not know if this will work for
anyone else but it might be worth a try for those that have not
been able to clear the level. Remember not to kill anything while
the cheat is on, as that is my theory as to why I still got credit
for the level. Now once I complete the Final Battle on Insane I
will have my Platinum.

All the bosses are easy in my opinion. Maybe Octaking is a pain in the ass the first 2 to 3 times but then you find out what you have to do and VOILA.....

My Strategy(very easy to beat octaking)
1)When the life bar of the boss appears on screen you drink a beer and give him a good devastator taste.
2)Until the beer effect fades out or your health runs low you take cover in to the little chamber to the right of the platform and wait for your health to refill. Then you drink the second beer that is just near the little chamber refill your ammo and give him a hell of rockets from the devastator.
3)Now when the beer fades out or your health runs low you go again to the right of the platform activate the holoduke and run to the far left corner of the platform.
4)Refill your ammo take rid of the octabrains as you are now invinsible and they can't send your rockets back to you and then don't stop spamming rockets to Octaking until the hologram fades out.
5)Keep dodging his attacks and keep refilling ammo and firing rockets.
