I've used this tactic before so I'll vouch for it
I have also used the Thief's Ring + Backstab trick as well

Easiest way by far is Thief's Ring + Death/Poison Cloud, you just sit and wait for him to die, zero risk involved, it doesn't take that long in 1st playthrough.

The Dragon Bone Smasher tactic also works, that's what I used a few weeks ago when I got my 3rd Plat, it's way more fun but: 1) Risky, even if you're high level he will kill you in 1 or 2 hits; 2) The bastard will try to fully heal when his health is low, you must be fast to stop him BUT you're using a very slow weapon.

If you go for melee, try using that Silver Shield you get from Garl Vinland if I'm not mistaken, it's the only one with 100% magic damage reduction, and the Old King attacks are also magic in nature, notice how you always take damage from him even when his attacks are blocked.

Also be wary that your World Tendency will go down after you kill him.

Thief's Ring + Poison Cloud was the way I went, with the occasional backstab.

Easiest tactic:
He can be rendered into one of the easiest enemies in the game if you do it correctly. After hitting him enough to make him start fight you, just run and hide behind the statue (for some reason he can't get to you there). If you got equipped thief's ring, he will soon enough go back to his original position. Just sneak to the side of the statue and cast Poison Cloud and Death Cloud, and go back into hiding and wait. He won't notice you, and therefor not heal. Just repeat this a couple times, and he should be dead.

I used Fire Spray for the whole battle. Took me a good 20 minutes but it was very easy...

I'm usually very lazy and cant wait for Poison Cloud or Soul Ray (maybe I'm less magically inclined), so I just used 2-hand a Blessed Mirdan Hammer, draw him out of the hall, and when he walks back keep taking potshots at him (normal attack) from the back and run away again (thief ring equipped of course). Followed this strategy from the wiki forums and works best so far for me.

This is basically what I did as well, worked perfectly and very quickly. Only about 5 minutes or so.

I'm a Blueblood Sword build, soul level was about 90. I kept Light Weapon on at all times.

Have thief ring, lure him out onto the bridge. As he's following you, sprint into the building by the catapults a little bit, then check on him. He gives up pretty easily and starts walking (not running) back to the hall.

WHILE HE'S WALKING IN A STRAIGHT PATH on the bridge, run (not sprint) up to him, then walk and backstab him. For me, Blueblood + Light Weapon, this meant a pretty big amount of damage.

Rinse and repeat... took maybe 10 backstabs total.

Also: make sure to stand around for a split second after back stabbing him! You want to make sure he is going to chase you, NOT heal himself. And, finally, even if he does start to chase you into the building, he seems to ALWAYS stop at the door way, even if he sees you. So just hang out by the first catapult and wait for him to turn around.

Easy strategy, and barely any time at all.
