1) When you're in the ModSpot, press , followed by pressing twice. It should get you to a little menu where you can change your drift vs. handling and acceleration vs. speed stats.

2) It doesn't have anything to do with the timing of the acceleration. To get the quick start at the beginning of the race, hold down to accelerate, and when the light turns green, press .
