Only when I did that and actually obtained the logs as items the trophy unlocked.

I can confirm that this is true. The
Hard Worker trophy popped after I manually cut wood using the woodcutter's axe in Riverwood. Just loading the wood-chopping machine and pulling the lever didn't do it for me.
